While polishing my nails today, I discovered that painting gouache is a lot like painting your nails. You can't make the coat too thick or too thin, it takes a long time to dry, and it has to be done just right so it doesn't look too streaky. You can add another layer if your first one wasn't thick enough. It can also chip if aggravated after dried. It can be frustrating if you don't get it right.
However, if done right, it looks smooth, clean, and pretty.
